Pineapple Pepper Chicken (Freezer Meal)

FOR ONE FAMILY
2 c unsweetened pineapple juice
1 c sugar
1 c vinegar
3/4 c water
1/2 c packed brown sugar
1/3 c cornstarch
1/4 c ketchup
3 T soy sauce
1 t chicken bouillon granules
1/2 t ground ginger
4 chicken breasts
1 c (8 oz) pineapple chunks, drained
1 medium green pepper, julienned (optional)

FOR 6 FAMILIES
12 c unsweetened pineapple juice
6 c sugar
6 c vinegar
4 1/2 c water
3 c packed brown sugar
2 c cornstarch
1 1/2 c ketchup
18 T soy sauce
6 t chicken bouillon granules
3 t ground ginger
24 chicken breasts
6 cans (8 oz) pineapple chunks, drained
6 medium green pepper, julienned (optional)

TO PREPARE FOR FREEZING:
In a gallon size freezer bag combine the first 10 ingredients, then add chicken. Seal and freeze. Set aside pineapple for pantry and freeze sliced pepper in a separate bag.

TO PREPARE AFTER FREEZING:
Thaw ingredients enough to place in crock pot. Cook on low for 5-6 hours. 30 minutes before it is finished add pineapple and green pepper, cook an additional 30 minutes. Serve over rice.

Blueberry Zucchini Bread

This bread was pretty good. It was moist, and easy to make.

3 eggs, lightly beaten
1 c. vegetable oil
3 t. vanilla
2 1/4 c. white sugar
2 c. shredded zucchini
3 c. flour
1 t. salt
1 t. baking powder
1 1/4 . baking soda
1 T ground cinnamon
1 pint fresh blueberries

Preheat oven to 350*. Lightly grease 4 mini-loaf pans. In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans. Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

Fruit Dip

1 can fruit cocktal, drained and crushed
1 8-oz block cream cheese
1 package vanilla instant pudding
1 T orange juice

Allow the cream cheese to soften (you can use the microwave if necessary. Add drained and crushed fruit cocktail, package of pudding dry, tablespoon of orange juice and mix well. Refrigerate for three hours and serve with graham crackers, vanilla wafers and the line. You can also shape it into a log and cover it with almond slivers.

Perfect Party Punch

3 (three ounce) packages of fruit flavored gelatin mix
4 c white sugar
13 c boiling water
2 (46 fl. oz) cans pineapple juice
1 (16 oz) bottle lemon juice concentrate
2 (two liter) bottles ginger ale, chilled

In a large bowl, combine gelatin and sugar. Stir in boiling water until mixture is dissolved. Stir in pineapple juice and lemon juice concentrate. Divide into two containers, and freeze until solid. To serve, place gelatin mixture in punch bowl, and chop into pieces. Pour in ginger ale.

Lower Fat Banana Bread

2/3 c. white sugar
1/4 c. margarine, softened
2 eggs
1 c. mashed bananas
1/4 c. water
1 2/3 c. all-purpose flour
1 t. baking soda
1/2 t. salt
1/4 t. baking powder


Preheat oven to 350 degrees. Spray one 9x5x3 in. loaf pan with a nonstick cooking spray. In a medium bowl, beat the white sugar and margarine until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended. Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
Bake at 350* for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 min., then remove from pan and let cool on rack. This fread is also excellent if you add mini chocolate chips.

Banana Oatmeal Chocolate Chip Cookies

My mom used to make these type of cookies whenever the bananas would go bad. I have been wanting some for a long time, and I swear everytime I buy bananas I think "this will be the time." Well, the last bananas I bought went bad WAY too fast, so I finally made the cookies. I was too lazy to look for my mom's recipe, so I just searched online and found this recipe. The cookies taste JUST like my mom's. Super fast, super easy, and super yummy! EnJoY!!


BANANA OATMEAL CHOCOLATE CHIP COOKIES

3/4 c. shortening
1 c. sugar
1 egg
1 c. mashed banana
1 3/4 c. oatmeal
1 1/2 c. flour
1/2 tsp. soda
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
Chocolate chips

Mix ingredients together and drop by spoonfuls onto ungreased cookie sheet. Bake at 350 degrees for 8-10 minutes.
